Israel, officially the State of Israel, is a country in the Southern Levant region of West Asia. It is bordered by Lebanon and Syria to the north, the West Bank and Jordan to the east, the Gaza Strip and Egypt to the southwest, and the Mediterranean Sea to the west. The country also has a small coastline on the Red Sea at its southernmost point, and part of the Dead Sea lies along its eastern border. Israel's proclaimed capital is in Jerusalem, while Tel Aviv is the country's largest urban area and economic center.

Israel is located in a region known to Jews as the Land of Israel, synonymous with the Palestine region, the Holy Land, and Canaan. In antiquity, it was home to the Canaanite civilization followed by the kingdoms of Israel and Judah. Situated at a continental crossroad, the region experienced demographic changes under the rule of various empires from the Romans to the Ottomans. European antisemitism in the late 19th century galvanized Zionism, which sought a Jewish homeland in Palestine and gained British support. After World War I, Britain occupied the region and established Mandatory Palestine in 1920. Increased Jewish immigration in the leadup to the Holocaust and British colonial policy led to intercommunal conflict between Jews and Arabs, which escalated into a civil war in 1947 after the UN proposed partitioning the land between them. The Israelites (/ˈɪzrəlaɪts, -riə-/; Hebrew: בְּנֵי יִשְׂרָאֵל‎, Bənēy Yīsrāʾēl, transl. 'Children of Israel') were a group of Semitic-speaking tribes in the ancient Near East who, during the Iron Age, inhabited a part of Canaan. They were also an ethnoreligious group.

The name of Israel first appears in the Merneptah Stele of ancient Egypt, dated to about 1200 BCE. Modern scholarship considers that the Israelites emerged from groups of indigenous Canaanites and other peoples. They spoke an archaic form of the Hebrew language, which was a regional variety of the Canaanite languages, known today as Biblical Hebrew. In the Iron Age, the kingdoms of Israel and Judah emerged. The Kingdom of Israel, with its capital at Samaria, fell to the Neo-Assyrian Empire around 720 BCE; while the Kingdom of Judah, with its capital at Jerusalem, was destroyed by the Neo-Babylonian Empire in 586 BCE. Ir Ovot (Hebrew: עִיר אֹבֹת ,עיר אובות, Ir Obot; lit. City of Oboth) is a small village in southern Israel. Located in the northeastern Arabah, it falls under the jurisdiction of Central Arava Regional Council. It operated as a kibbutz from 1967 until the 1980s. In 2019 it had a population of 54.

It is the site of an extensive archaeological complex known as Tamar Fortress or Hatzevah Fortress (Hebrew: מצודת חצבה) which dates to the 10th century BCE (United Monarchy/First Temple period). (Full article...)

Gefilte fish (/ɡəˈfɪltə fɪʃ/; from Yiddish: געפֿילטע פֿיש, German: Gefüllter Fisch / Gefüllte Fische, lit. "stuffed fish") is a dish made from a poached mixture of ground deboned fish, such as carp, whitefish, or pike. It is traditionally served as an appetizer by Ashkenazi Jewish households. Popular on Shabbat and Jewish holidays such as Passover, it may be consumed throughout the year. It is typically garnished with a slice of cooked carrot on top.

Historically, gefilte fish was a stuffed whole fish consisting of minced-fish forcemeat stuffed inside the intact fish skin. By the 16th century, cooks had started omitting the labor-intensive stuffing step, and the seasoned fish was most commonly formed into patties similar to quenelles or fish balls. (Full article...)
